Brussels Sprouts and Apple Salad with POP Mustard

Ingredients

5T apple cider vinegar
2T pure maple syrup
3 tsp ORIGINAL POP MUSTARD
1 tsp. finely chopped thyme
Kosher salt and freshly ground black pepper
½ c olive oil
10 oz. b sprouts, trimmed and halved
1 large gala apple
2 tsp. fresh lemon juice
½ small red onion, thinly sliced
¼ c dried cranberries

Directions

Whisk together the vinegar, maple syrup, POP MUSTARD, and thyme in a small bowl. Season with salt and pepper then slowly whisk in the olive oil until emulsified. Fit the food processor with the slicing disk and slice all of the brussels sprouts. Remove to a large bowl then fluff and separate the pieces with your fingers. Fit the food processor with the shredding blade and grate the apple. Add to the brussels sprouts and sprinkle with lemon juice and some of the vinaigrette. Add the onion and cranberries, drizzle with more of the vinaigrette and season with salt and pepper. Toss to combine and transfer to a platter.
