Michael Januska

Michael Januska is a modern master of mustards. A life-long chef and artisanal cheese producer, Januska sought to create a mustard that embraced the texture and flavor that would compliment his creations. The mustards he created soon became the pop star of the mustard industry garnering Gold Medals at various food shows and international competitions.

Michael Symon’s deep love of mustards has been evident in his cooking for decades. His desire to find and produce the perfect mustard was realized when he found Januska’s unique blends in his hometown, Cleveland. It was love at first bite. He knew immediately that the whole seed recipes were ripe for a partnership to bring a new and exciting twist to a staid category.

Our unique Caviar style mustards consist of whole mustard seeds sourced from a cooperative of farmers. Each seed is treated by pickling, fermenting or smoking. The result is a pop of fresh mustard flavor in every bite.

Pop Mustards are produced in Cleveland, Ohio. POP hand-selects only the highest quality, all natural ingredients. We barrel age all of our whole seed mustards. We also use a variety of proprietary techniques including wood smoking, pickling, brining and infusion to create the unique flavor profiles.
